Instructions

Prepare the Meatloaf Mixture:

    - Preheat your oven to 350°F (175°C).

      - In a large bowl, combine the ground beef, breadcrumbs, milk, chopped onion, minced garlic, egg, Worcestershire sauce, oregano, thyme, salt, and pepper. Mix gently until just combined; avoid overmixing to keep the meatloaf tender.

        Shape and Bake:

          - Transfer the mixture to a loaf pan or shape it into a free-form loaf on a baking sheet.

            - Spread the 1/4 cup of ketchup evenly over the top of the meatloaf. If desired, mix the brown sugar with the ketchup for a sweet glaze.

              - Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (70°C). Let it rest for 10 minutes before slicing.

                Prepare the Garlic Mashed Potatoes:

                  - While the meatloaf is baking, bring a large pot of salted water to a boil. Add the chopped potatoes and garlic cloves, cooking until the potatoes are fork-tender, about 15-20 minutes.

                    - Drain well and return the potatoes and garlic to the pot. Add milk and butter, mashing until smooth and creamy. Season with salt and pepper to taste.

                      Serve:

                        - Slice the meatloaf and serve it alongside a generous scoop of garlic mashed potatoes. Garnish with fresh chives or parsley if desired.
