Ingredients

For the Meatloaf:

1 ½ pounds ground beef (preferably chuck)

1 cup breadcrumbs (preferably panko)

1 small onion, finely chopped

2 cloves garlic, minced

2 large eggs

½ cup milk

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

½ cup ketchup (plus extra for topping)

1 tablespoon brown sugar (optional, for the topping)

For the Mashed Potatoes:

2 pounds russet potatoes, peeled and cubed

½ cup butter

¾ cup whole milk (or cream for extra richness)

Salt and pepper to taste

Optional: fresh chives or parsley, for garnish

Instructions

Prepare the Meatloaf Mixture:

    - Preheat your oven to 350°F (175°C).

      - In a large bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, eggs, milk, Worcestershire sauce, thyme, oregano, salt, and black pepper. Mix gently with your hands until all ingredients are well incorporated, but do not overmix.

        Shape the Meatloaf:

          - Transfer the meat mixture into a loaf pan or shape it into a loaf on a lined baking sheet. Make a small groove in the middle of the loaf with your finger.

            Add the Topping:

              - In a small bowl, mix together the ketchup and brown sugar (if using). Spread this mixture over the top of the meatloaf evenly.

                Bake:

                  - Place the meatloaf in the preheated oven and bake for about 1 hour, or until it reaches an internal temperature of 160°F (70°C). If the top begins to brown too quickly, loosely cover it with aluminum foil.

                    Prepare the Mashed Potatoes:

                      - While the meatloaf is baking, bring a large pot of salted water to a boil. Add the cubed potatoes and cook until fork-tender, about 15-20 minutes.

                        - Drain the potatoes and return them to the pot. Add butter and begin mashing with a potato masher or ricer. Gradually stir in the milk until you reach your desired consistency. Season with salt and pepper to taste.

                          Serve:

                            - Once the meatloaf is done, let it rest for about 10 minutes before slicing. Serve slices of meatloaf alongside a generous scoop of creamy mashed potatoes. Garnish the potatoes with fresh chives or parsley, if desired.
