1 lb (450g) boneless, skinless chicken thighs

1/2 cup honey

1/4 cup soy sauce (low sodium preferred)

4 cloves garlic, minced

1 tablespoon apple cider vinegar

1 teaspoon sesame oil

1 teaspoon ginger, grated

1 tablespoon cornstarch

2 tablespoons water

8 slider buns (mini brioche or potato rolls work well)

1 cup sharp cheddar cheese, shredded

1/4 cup green onions, chopped

Lettuce or coleslaw (for topping)

Salt and pepper to taste

Cooking oil (for frying)

Instructions
 

Marinate the Chicken: In a bowl, combine honey, soy sauce, minced garlic, apple cider vinegar, sesame oil, and grated ginger. Whisk until well mixed. Add chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes (or up to overnight for better flavor).

    Cook the Chicken: Remove the chicken from the marinade (keeping the marinade for later) and season with salt and pepper. In a skillet over medium heat, add a drizzle of cooking oil. Once hot, add the chicken and cook for 5-7 minutes per side, or until cooked through and golden brown.

      Make the Sauce: In a small saucepan, combine the reserved marinade with cornstarch and water. Bring to a simmer over medium heat, stirring constantly until the sauce thickens (about 3-5 minutes). Remove from heat.

        Shred the Chicken: Once cooked, let the chicken rest for a few minutes, then shred it using two forks. Toss shredded chicken in the thickened sauce until well coated.

          Assemble the Sliders: Preheat your oven to 350°F (175°C). Slice slider buns in half and place the bottoms on a baking sheet. Add a generous portion of the honey garlic chicken on each bun, followed by a handful of shredded cheddar cheese.
