Ingredients

For the filling:

3 medium-sized green apples, peeled, cored, and chopped (about 4 cups)

2 tablespoons erythritol or any keto-friendly sweetener

1 teaspoon ground cinnamon

1 teaspoon lemon juice

1/2 teaspoon vanilla extract

For the almond topping:

1 cup almond flour

1/2 cup sliced almonds

1/4 cup unsweetened shredded coconut (optional)

1/4 cup melted butter or coconut oil

3 tablespoons erythritol or any keto-friendly sweetener

1/2 teaspoon ground cinnamon

Pinch of salt

Instructions

Preheat the oven: Preheat your oven to 350°F (175°C).

    Prepare the apple filling:

      - In a large mixing bowl, combine the chopped apples with erythritol, ground cinnamon, lemon juice, and vanilla extract. Toss until the apples are well-coated.

        - Spread the apple mixture evenly into a greased 9-inch pie dish or baking dish.

          Make the almond topping:

            - In another mixing bowl, combine the almond flour, sliced almonds, shredded coconut (if using), melted butter (or coconut oil), erythritol, ground cinnamon, and a pinch of salt.

              - Mix thoroughly with a fork or your hands until the mixture resembles coarse crumbs.

                Assemble the crumble:

                  - Evenly spread the almond topping over the apple filling, ensuring it covers the apples completely.

                    Bake the crumble:

                      - Place the assembled dish in the preheated oven. Bake for 25-30 minutes, or until the topping is golden brown and the apples are bubbling.

                        Cool and serve:

                          - Remove the dish from the oven and allow it to cool for at least 10 minutes before serving. This dessert is delicious on its own or paired with a dollop of sugar-free whipped cream or vanilla keto ice cream.
