Lemon Dill Potato Crusted Chicken Bites

1 lb (450g) chicken breast, cut into bite-sized pieces

1 cup (100g) potato flakes

1/2 cup (50g) grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp dried dill weed

Zest of 1 lemon

1/2 tsp salt

1/4 tsp black pepper

2 eggs, beaten

1/4 cup (60ml) lemon juice

Olive oil spray (or vegetable oil for frying)

Fresh dill sprigs for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken bites with lemon juice, garlic powder, onion powder, salt, and pepper. Let it marinate for at least 30 minutes in the refrigerator to enhance the flavor.

    Prepare the Coating: In another bowl, mix together the potato flakes, grated Parmesan cheese, dried dill weed, and lemon zest. This will be the crispy coating for the chicken.

      Set Up Breading Station: Preheat your oven to 400°F (200°C). Get a baking sheet ready by lining it with parchment paper. Set up a breading station with the marinated chicken in one bowl, the beaten eggs in another, and the potato mixture in a third.

        Bread the Chicken: Take each piece of marinated chicken, dip it into the beaten eggs, letting any excess drip off, and then dredge it in the potato mixture, pressing gently to adhere the coating. Place the breaded chicken bites onto the prepared baking sheet.
