1/2 cup rolled oats

1/4 cup poppy seeds

1 teaspoon baking powder

1/3 cup plain Greek yogurt

1/4 cup melted coconut oil (or vegetable oil)

2 large eggs

Zest of 2 lemons

1/4 cup fresh lemon juice (about 1 large lemon)

1 teaspoon vanilla extract

Optional: 1/2 cup chopped nuts or seeds (almonds, walnuts, or sunflower seeds) for added crunch

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it with non-stick spray.
