1 cup whole wheat flour

1/2 cup almond flour

1/4 cup vanilla protein powder (whey or plant-based)

1/4 cup granulated sweetener (stevia, monk fruit, or sugar)

2 tablespoons poppy seeds

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup Greek yogurt (plain, unsweetened)

1/2 cup almond milk (unsweetened)

2 large eggs

Zest of 1 large lemon

1/4 cup fresh lemon juice

1 teaspoon vanilla extract

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or spray it lightly with non-stick cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the whole wheat flour, almond flour, protein powder, sweetener, poppy seeds, baking soda, baking powder, and salt until evenly combined.

      Combine Wet Ingredients: In a separate bowl, mix the Greek yogurt, almond milk, eggs, lemon zest, lemon juice, and vanilla extract. Beat well until smooth and creamy.

        Combine Mixtures: Pour the wet ingredients into the bowl with dry ingredients. Gently fold everything together using a spatula until just combined. Be careful not to overmix; a few lumps are perfectly fine.

          Fill the Muffin Pan: Divide the batter evenly into the prepared muffin pan, filling each cup about 3/4 full.
