Loaded Chicken and Bacon Potato Skillet

1.5 lbs baby Yukon gold potatoes, diced

2 tablespoons olive oil

Salt and pepper, to taste

1 lb boneless, skinless chicken breasts, diced

6 strips of bacon, chopped

1 medium onion, diced

3 cloves garlic, minced

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup green onions, chopped

1 teaspoon smoked paprika

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

Instructions
 

Prep Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook for about 10-12 minutes, stirring occasionally, until golden and tender. Remove from skillet and set aside.

    Cook Bacon: In the same skillet, add the chopped bacon and cook until crispy. Remove the bacon with a slotted spoon and place it on a paper towel-lined plate to drain excess grease, leaving a little grease in the skillet.

      Sauté Chicken: In the remaining bacon grease, add another tablespoon of olive oil if necessary. Add the diced chicken breasts to the skillet, season with smoked paprika, onion powder, garlic powder, salt, and pepper. Cook for about 8-10 minutes, or until the chicken is browned and cooked through.

        Add Onions and Garlic: Stir in the diced onion and minced garlic into the chicken. Sauté for another 3-4 minutes until the onion is translucent and fragrant.

          Combine Ingredients: Add the cooked potatoes back into the skillet along with the crispy bacon. Stir everything together, ensuring the chicken, potatoes, and bacon are well mixed.

            Melt Cheese: Sprinkle the shredded cheddar cheese over the top of the skillet. Cover and cook on low heat for about 3-5 minutes until the cheese is melted and bubbly.
