2 cups grated carrots (about 4 medium-sized carrots)

1 cup all-purpose flour

1/2 cup whole wheat flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp salt

1/2 cup vegetable oil

1/2 cup brown sugar, packed

1/4 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1/2 cup crushed pineapple, drained

1/2 cup chopped walnuts or pecans (optional)

For the Maple Glaze:

1 cup powdered sugar

2-3 tbsp maple syrup

1-2 tbsp milk (or non-dairy milk)

Prepare the Oven and Baking Pan: Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch square baking pan with parchment paper, leaving an overhang for easy removal.

    Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

      Combine Wet Ingredients: In a separate bowl, whisk together the vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract until smooth. Mix in the grated carrots and crushed pineapple, ensuring everything is well blended.
