4 medium sweet potatoes, peeled and cut into 1-inch cubes

3 tablespoons olive oil

1/4 cup pure maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 teaspoon sea salt

1/2 teaspoon black pepper

1 tablespoon fresh rosemary, chopped (optional)

1/4 cup pecans or walnuts, chopped (optional for crunch)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Sweet Potatoes: In a large bowl, combine the cubed sweet potatoes with the olive oil, ensuring each piece is well-coated.

      Add Flavors: Drizzle the maple syrup over the sweet potatoes, then sprinkle in the ground cinnamon, nutmeg, sea salt, and black pepper. Toss everything together until the sweet potatoes are evenly coated in the glaze.
