Mediterranean Chickpea Salad

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, diced

1/4 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

2 tablespoons olive oil

1 tablespoon red wine vinegar

1 teaspoon dried oregano

Salt and pepper, to taste

Juice of 1 lemon

Instructions
 

Start by preparing your ingredients. Drain and rinse the canned chickpeas, then place them in a large mixing bowl.

    Add the halved cherry tomatoes, diced cucumber, red bell pepper, and red onion to the chickpeas. Stir gently to combine, making sure not to mash the chickpeas.

      Incorporate the sliced Kalamata olives and chopped parsley into the mix.

        In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, lemon juice, and a pinch of salt and pepper. Adjust the seasoning according to your taste.

          Pour the dressing over the salad and toss gently until everything is well-coated.

            If using, sprinkle the crumbled feta cheese over the top of the salad for added flavor and texture.

              Allow the salad to sit for at least 10 minutes to let the flavors meld, or refrigerate for up to an hour for a cooler serving option.

                Serve chilled or at room temperature, garnished with extra parsley or feta if desired.
