1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

¼ tsp ground nutmeg

¾ cup granulated sugar

½ cup brown sugar, packed

1/2 cup unsalted butter, softened

2 large eggs

1 tsp vanilla extract

1 cup apples, peeled and diced (about 2 medium apples)

½ cup walnuts or pecans, chopped (optional)

2 tbsp granulated sugar (for topping)

1 tsp ground cinnamon (for topping)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease mini loaf pans (you should have enough batter for 4-5 mini loaves) or line them with parchment paper for easy removal.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

      Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to beat the softened butter, granulated sugar, and brown sugar together until fluffy and light in color, about 3-4 minutes.

        Add Eggs and Vanilla: Add the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract.

          Combine Ingredients: Gradually add the dry ingredients into the wet mixture, mixing until just combined. Be careful not to overmix, as this will lead to dense bread.

            Fold in Apples and Nuts: Gently fold in the diced apples and, if using, the chopped nuts until evenly distributed throughout the batter.
