Ingredients

4 small flatbreads (or pita bread)

1 cup fresh mozzarella cheese, sliced (or bocconcini)

1 cup cherry tomatoes, halved

1 cup fresh basil leaves

2 tablespoons balsamic glaze

2 tablespoons olive oil

Salt and pepper to taste

Pinch of red pepper flakes (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Flatbreads: Place the small flatbreads on a baking sheet lined with parchment paper. Brush each flatbread with olive oil, ensuring even coverage.

Add Cheese: Lay slices of fresh mozzarella evenly across the flatbreads. Be generous so that every bite is cheesy!

Top with Tomatoes: Scatter the halved cherry tomatoes over the mozzarella, distributing them evenly. They should nestle nicely into the cheese.

Season: Sprinkle some salt and pepper over the tomatoes and mozzarella. If you like a bit of heat, add a pinch of red pepper flakes for an extra kick.

Bake: Place the baking sheet in the preheated oven and bake for about 8-10 minutes, or until the mozzarella is melted and bubbly, and the flatbreads are lightly toasted.

Add Basil: Once out of the oven, top the hot flatbreads with fresh basil leaves. The heat will slightly wilt the basil, releasing its aromatic oils.

Drizzle with Balsamic Glaze: Finish the melts with a drizzle of balsamic glaze over the top for a sweet and tangy contrast.

Slice and Serve: Cut the flatbreads into bite-sized pieces and serve warm. Enjoy the gooey, cheesy goodness with a refreshing burst of flavors!
