½ cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

¾ cup buttermilk

For the Chili Filling:

1 cup cooked chili (canned or homemade, ideally with beans)

1 teaspoon ground cumin

½ teaspoon smoked paprika

½ cup diced onions (sautéed)

½ cup diced bell peppers (sautéed)

Optional: hot sauce to taste

For Toppings:

Extra shredded cheddar cheese

Sliced jalapeños

Fresh cilantro, chopped

Sour cream (for serving)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make the Biscuit Dough:

      - In a large mixing bowl, whisk together the flour, baking powder, salt, and garlic powder.

        - Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

          - Stir in the shredded cheddar cheese until evenly distributed.

            - Pour in the buttermilk and gently mix until just combined. Avoid overworking the dough.

              Form the Biscuits:

                - Turn the dough onto a floured surface and gently knead it a few times until it comes together.

                  - Pat the dough into a rectangle about ½ inch thick.

                    - Cut out small biscuit rounds (about 2 inches in diameter) using a biscuit cutter or a glass. Gather and re-roll scraps as necessary.

                      Prepare the Chili Filling:

                        - In a medium bowl, combine the cooked chili, ground cumin, smoked paprika, sautéed onions, and bell peppers. Adjust seasoning and add hot sauce if desired.
