Mini Chicken Alfredo Toast Cups

1 loaf of French baguette or ciabatta bread

1 tablespoon olive oil

2 cups cooked chicken breast, shredded

1 cup heavy cream

1 cup grated parmesan cheese

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup fresh spinach, chopped (optional)

Fresh parsley or basil for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bread Cups: Slice the baguette into 1-inch thick rounds. Using a round cookie cutter or a small glass, gently remove the center of each round to create a cup shape, leaving a border around the edges. Place the bread cups on a baking sheet.

      Toast the Bread: Brush each bread cup lightly with olive oil. Bake in the preheated oven for 10-12 minutes, until golden and slightly crisp. Remove from the oven and set aside.

        Cook the Alfredo Sauce: In a medium saucepan over medium heat, add minced garlic and sauté for about 1 minute until fragrant. Add the heavy cream and simmer for 2-3 minutes, stirring continuously.

          Add Cheese and Seasonings: Gradually stir in the parmesan cheese until melted and creamy. Then, add shredded chicken, Italian seasoning, salt, pepper, and chopped spinach (if using). Stir until everything is well combined and heated through, about 3-4 minutes.

            Fill the Cups: Spoon the chicken Alfredo mixture into each toasted bread cup, filling them generously.

              Final Baking: Return the filled cups to the oven and bake for an additional 5-7 minutes, until everything is heated through and the tops are slightly golden.

                Garnish and Serve: Remove from the oven and let cool for a minute. Garnish with freshly chopped parsley or basil before serving.
