Ingredients
  

2 medium-sized eggplants

1 cup of fresh mozzarella cheese, sliced

1 cup of fresh basil leaves

1 cup of marinara sauce

2 tablespoons of olive oil

1 teaspoon of garlic powder

1 teaspoon of Italian seasoning

Salt and pepper to taste

1 cup of breadcrumbs (optional, for crunch)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Eggplants:

    - Slice the eggplants lengthwise into thin strips (approximately ¼ inch thick).

      - Sprinkle each side with salt and set them aside for about 20 minutes to draw out excess moisture. Rinse and pat dry.

        Cook the Eggplants:

          - Preheat your grill or a non-stick skillet over medium-high heat.

            - Brush both sides of the eggplant strips with olive oil and season with garlic powder, Italian seasoning, salt, and pepper.

              - Grill or sauté the eggplant strips for about 3-4 minutes on each side until they are tender and have grill marks. Remove from heat and set aside.

                Assemble the Wrap Rolls:

                  - On a flat surface, take one grilled eggplant strip and place a slice of mozzarella cheese and a few basil leaves at one end.

                    - Roll the eggplant over the filling tightly from one end to the other. If desired, you can secure the roll with a toothpick.

                      - Repeat the process with the remaining eggplant strips and filling.

                        Bake the Rolls (Optional Crunch):

                          - Preheat your oven to 375°F (190°C).

                            - If you like a crunchy texture, roll each assembled eggplant roll in breadcrumbs.

                              - Place the rolls seam-side down in a baking dish and pour marinara sauce over them.

                                - Bake in the preheated oven for about 15-20 minutes or until the cheese is melted and the tops are golden.

                                  Serve:
