Mini Falafel Lettuce Wrap Bites

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1/4 small onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp baking powder

Salt and pepper, to taste

1/2 cup breadcrumbs (or gluten-free alternative)

1 tbsp olive oil

1 head of butter lettuce (or romaine), leaves separated and washed

1/2 cup tzatziki sauce (store-bought or homemade)

Sliced cherry tomatoes (for garnish)

Optional: Pickled red onions (for garnish)

Instructions
 

In a food processor, combine the drained chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture is well combined but still slightly chunky.

    Add the breadcrumbs and pulse a few more times until the mixture holds together when pressed. If needed, adjust seasoning and texture by adding more breadcrumbs, if too wet or a drizzle of water, if too dry.

      Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

        Roll the falafel mixture into small balls, about the size of a tablespoon, and place them on the prepared baking sheet. Lightly brush or spray with olive oil to help them crisp up.

          Bake in the preheated oven for about 20-25 minutes, flipping halfway through, until they are golden brown and crispy on the outside.

            While the falafel are baking, prepare your lettuce wraps by laying the lettuce leaves on a serving platter.

              Once the falafel are done, allow them to cool slightly before assembling the bites. Place a falafel ball inside each lettuce leaf and top with a dollop of tzatziki sauce, sliced cherry tomatoes, and optional pickled red onions.
