1/2 cup whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon ground cloves

3/4 cup granulated sugar

1/2 cup packed brown sugar

1 large egg

1/2 cup unsweetened applesauce

1 cup canned pumpkin puree

1/2 cup vegetable oil

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

1/4 cup chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or lightly grease the cups.

    Mix the Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves until well combined.

      Cream the Sugars and Egg: In another bowl, mix the granulated sugar, brown sugar, and egg together until light and fluffy. This should take about 2-3 minutes.

        Combine Wet Ingredients: Stir in the applesauce, pumpkin puree, vegetable oil, and vanilla extract into the sugar mixture until fully incorporated.
