Mini Sweet Potato BLT Sliders

Ingredients
  

2 medium sweet potatoes

8 slices of cooked crispy bacon

1 cup fresh arugula or spinach

1 medium ripe tomato, sliced

1/4 cup mayonnaise

1 tablespoon Dijon mustard

Salt and pepper to taste

1 tablespoon olive oil

1 teaspoon smoked paprika

8 small slider-sized buns (adjust according to sweet potato slices)

Optional: pickled jalapeños for extra heat

Instructions
 

Prepare the Sweet Potatoes: Preheat your oven to 450°F (230°C). Wash and scrub the sweet potatoes clean, then slice them into rounds approximately 1 inch thick. Toss the sweet potato slices with olive oil, smoked paprika, salt, and pepper.

    Roast the Sweet Potatoes: Arrange the slices in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 20-25 minutes, flipping halfway through, until they are tender and have started to caramelize.

      Prepare the Sauce: While the sweet potatoes roast, mix together the mayonnaise and Dijon mustard in a small bowl. Set aside.

        Assemble the Sliders: Once the sweet potato slices are done, remove them from the oven and let them cool slightly. Start building your sliders by spreading a thin layer of the mayo-Dijon sauce on the bottom half of each slider bun.

          Layer the Ingredients: Place a sweet potato slice on each bun half. Top it with a few pieces of crispy bacon, a slice of fresh tomato, and a handful of arugula or spinach. If you like some heat, add a few pickled jalapeños on top.

            Complete the Sliders: Place the top half of the bun over the loaded bottom half to complete the sliders. You can secure them with a toothpick if needed.
