1 can (5 oz) light tuna in water, drained

1 ripe avocado

1 tablespoon Greek yogurt (or mayonnaise)

1 teaspoon Dijon mustard

1 teaspoon lemon juice

Salt and pepper, to taste

8 small slices of whole-grain bread or 4 large slices, cut in half

1 small cucumber, thinly sliced

Fresh dill or parsley for garnish

Olive oil for toasting

Instructions
 

Prepare the Tuna Mix:

    - In a medium bowl, mash the ripe avocado with a fork until smooth yet chunky.

      - Add the drained tuna, Greek yogurt (or mayonnaise), Dijon mustard, lemon juice, salt, and pepper. Mix well until all ingredients are combined and creamy.

        Toast the Bread:

          - Heat a non-stick skillet over medium heat and add a drizzle of olive oil.

            - Toast each slice of bread until golden brown on both sides, about 2-3 minutes per side. If you prefer, you can also use a toaster.

              Assemble the Pockets:

                - For each slice of toasted bread, spread a generous amount of the tuna avocado mixture on one slice.

                  - Layer several thin cucumber slices on top of the tuna mix.

                    - Top with another slice of toasted bread to create a pocket. If using large bread slices, you can use a cookie cutter to shape smaller pockets if desired.

                      Garnish and Serve:

                        - Cut the assembled pockets in half diagonally for a stylish presentation.

                          - Arrange on a plate, sprinkle with fresh dill or parsley for garnish, and serve immediately.
