2 large cucumbers

1 can (5 oz) tuna in water, drained

2 tablespoons mayonnaise (or Greek yogurt for a healthier option)

1 tablespoon Dijon mustard

1 tablespoon lime juice

2 tablespoons finely chopped red onion

2 tablespoons finely chopped celery

1 tablespoon capers, rinsed and chopped

Salt and pepper to taste

Fresh dill or parsley for garnish

Prepare the Cucumbers: Wash the cucumbers thoroughly and slice them into 1-inch thick rounds. Pat them dry with a paper towel to remove excess moisture. These will serve as the base for your stacks.

    Make the Tuna Salad: In a mixing bowl, combine the drained tuna, mayonnaise (or Greek yogurt), Dijon mustard, lime juice, red onion, celery, and capers. Mix well until all ingredients are thoroughly combined. Season with salt and pepper to taste.

      Assemble the Stacks: On a serving platter, place a cucumber slice as the base. Scoop a generous tablespoon of the tuna salad mixture onto the cucumber. Top with another cucumber slice and repeat the process to create a stack.
