6 large eggs

1/4 cup milk (or a dairy-free alternative)

1 cup finely chopped bell peppers (red, yellow, and green)

1 cup baby spinach, chopped

1/2 cup cherry tomatoes, halved

1/2 cup shredded cheese (cheddar, mozzarella, or your choice)

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

8 slices of whole-grain bread

Olive oil or butter for greasing

Fresh herbs (parsley or chives) for garnish

Preheat the Oven: Start by preheating your oven to 375°F (190°C) and greasing a muffin tin with olive oil or butter.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and milk until well combined. Add salt, black pepper, and garlic powder, and mix again.

      Add Vegetables: Fold in the chopped bell peppers, baby spinach, cherry tomatoes, and shredded cheese into the egg mixture. Ensure all ingredients are well distributed.

        Fill Muffin Tin: Pour the egg and veggie mixture into the greased muffin tin, filling each cavity about 3/4 full.

          Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the frittatas are puffed and golden brown. A toothpick should come out clean when inserted in the center.
