1 ½ cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

1 tablespoon sugar

1 ¼ cups milk

1 large egg

3 tablespoons melted butter

1 teaspoon vanilla extract

8 slices of bacon

4 large eggs

½ cup shredded cheddar cheese

Fresh spinach or arugula (for garnish)

Maple syrup (for drizzling)

Cooking spray or oil (for the waffle iron)

Preheat the Waffle Iron: Plug in your waffle iron and preheat it according to the manufacturer's instructions.

    Prepare Waffle Batter: In a large bowl, whisk together the flour, baking powder, salt, and sugar. In another bowl, mix the milk, egg, melted butter, and vanilla extract until smooth. Gradually combine the wet ingredients with the dry ingredients, stirring until just combined. Be careful not to over-mix; some lumps are okay.

      Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Remove from the skillet and place on paper towels to drain excess grease.

        Cook the Waffles: Lightly grease the waffle iron with cooking spray or oil. Pour enough batter into the waffle iron to cover the surface (usually about ¼ to ½ cup, depending on the size). Close the lid and cook until golden brown, this usually takes about 3-5 minutes. Repeat until you've made 8 small waffles.

          Prepare the Eggs: In the same skillet with bacon grease, crack the eggs and cook them sunny-side up or to your desired doneness, seasoning with a pinch of salt and pepper. For added flavor, sprinkle the shredded cheddar cheese on top of the eggs and allow it to melt for the last minute of cooking.

            Assemble the Sandwiches: Place one mini waffle on a plate, layer a piece of bacon on top, followed by a cheesy egg and a handful of fresh spinach or arugula. Top it with another mini waffle, and if desired, drizzle with maple syrup for a sweet touch.
