Mini Zucchini Grilled Cheese Sandwiches

2 medium zucchinis, thinly sliced

4 slices of sourdough or multigrain bread

4 oz sharp cheddar cheese, shredded

4 oz mozzarella cheese, shredded

2 tablespoons unsalted butter, softened

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves (optional, for garnish)

Balsamic glaze (optional, for drizzling)

Instructions
 

Prepare the Zucchini: Start by slicing the zucchinis into thin rounds, about 1/4 inch thick. Sprinkle with salt and let them sit for approximately 15 minutes to draw out excess moisture. Pat them dry with a paper towel.

    Sauté the Zucchini: In a skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the sliced zucchini, season with pepper, and sauté until they are tender and slightly golden, about 3-4 minutes. Remove from heat and set aside.

      Assemble the Sandwiches: Take two slices of bread, and on one slice, spread a thin layer of softened butter. On the other slice, layer a mix of cheddar and mozzarella cheeses. Add a layer of sautéed zucchini on top of the cheese, then sprinkle a little more cheese on top of the zucchini. Place the other slice of bread on top, buttered side up, to complete the sandwich.

        Grill the Sandwiches: In the same skillet over medium heat, place the assembled sandwich. Cook until the bread is golden brown, around 3-4 minutes. Carefully flip the sandwich and cook the other side, pressing down gently with a spatula, until golden brown and the cheese is melted, about another 3-4 minutes. Repeat with remaining sandwiches.

          Serve: Once all sandwiches are grilled, remove from heat and cut them into halves or quarters for bite-sized portions. Optionally, top with fresh basil leaves and drizzle with balsamic glaze for an extra flavor boost.
