1 cup pitted dates, packed

1 cup fresh raspberries (plus extra for garnish)

1/2 cup freshly squeezed lemon juice

2 tablespoons lemon zest

1/4 cup maple syrup (adjust based on sweetness preference)

1 (14 oz) can coconut milk (chilled overnight and only using the solid cream)

1 teaspoon vanilla extract

1 tablespoon chia seeds (optional, for added texture)

Prepare the Base: In a food processor, combine almond flour, pitted dates, melted coconut oil, and sea salt. Process until the mixture is crumbly but holds together when pressed.

    Form the Layer: Line an 8x8-inch baking dish with parchment paper, leaving an overhang for easy removal. Press the almond-date mixture firmly into the bottom of the dish to form a smooth, even base. Place in the freezer to set while preparing the filling.

      Make the Filling: In the cleaned food processor, combine the fresh raspberries, lemon juice, lemon zest, maple syrup, and chilled coconut cream. Blend until smooth and creamy. Taste the mixture and adjust the sweetness if necessary by adding more maple syrup.

        Incorporate Chia Seeds: If using chia seeds for added texture, stir them into the berry mixture slowly so they distribute evenly.

          Assemble the Bars: Remove the base from the freezer and pour the raspberry lemon mixture over it. Spread evenly using a spatula.
