Ingredients

1 cup rolled oats

1/2 cup almond flour (or any nut flour)

1/4 cup unsweetened cocoa powder

1/4 cup vanilla protein powder (optional)

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup freeze-dried strawberries (chopped)

1/3 cup dark chocolate chips (dairy-free if needed)

1/3 cup white chocolate chips (dairy-free if needed)

Instructions

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, cocoa powder, vanilla protein powder (if using), and salt. Stir until all dry ingredients are well combined.

Add Wet Ingredients: In a separate bowl, mix together the almond butter, honey (or maple syrup), and vanilla extract until smooth.

Combine Mixtures: Pour the wet mixture into the dry ingredients. Using a spatula or your hands, mix everything together until it forms a dough-like consistency. If the mixture is too dry, add a tablespoon of water or additional nut butter until it binds together nicely.

Fold in Flavors: Gently fold in the chopped freeze-dried strawberries, dark chocolate chips, and white chocolate chips. Make sure they're evenly distributed throughout the mixture.

Shape Bites: Using your hands, scoop out small portions of the dough and roll them into bite-sized balls (about 1 inch in diameter). Place the energy bites on a baking sheet or plate lined with parchment paper.

Chill: Once all bites are formed, refrigerate them for at least 30 minutes to set. This helps them firm up and makes them easier to grab on the go.

Serve & Store: Enjoy the energy bites cold from the fridge, or take them as a quick snack throughout the week. Store leftovers in an airtight container in the fridge for up to a week.
