Ingredients

1 cup rolled oats

½ cup natural peanut butter (smooth or crunchy)

¼ cup honey or maple syrup

½ cup crispy rice cereal

¼ cup mini chocolate chips (optional, but highly recommended!)

¼ cup chopped nuts (almonds, walnuts, or pecans work well)

1 teaspoon vanilla extract

A pinch of salt

Instructions

Prepare Your Muffin Tin: Line a standard muffin tin with paper liners or spray it lightly with cooking spray for easy removal later.

Mix the Wet Ingredients: In a medium mixing bowl, combine the peanut butter, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix until smooth and well blended.

Add Dry Ingredients: To the wet mixture, fold in the rolled oats, crispy rice cereal, chopped nuts, and mini chocolate chips. Stir gently until all ingredients are evenly coated and combined.

Scoop and Press: Using a tablespoon or a small ice cream scoop, portion the mixture into the prepared muffin tin. Press down firmly to pack the mixture into each cup, ensuring they hold together when set.

Chill and Set: Place the muffin tin in the refrigerator for at least 30 minutes, or until the granola cups are firm and easy to remove.

Serve: Once set, remove the granola cups from the tins (if using liners, just peel them off). Enjoy them immediately or store them in an airtight container in the fridge for up to a week.
