One-Pan Cheesy Beef and Broccoli Skillet

Ingredients
  

1 lb ground beef (80/20)

2 cups broccoli florets (fresh or frozen)

1 cup uncooked rice (long grain or jasmine)

2 cups beef broth (or water)

1 cup shredded cheddar cheese (plus more for topping)

1 medium onion, diced

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

Optional garnish: sliced green onions

Instructions
 

Cook the Beef: In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

    Brown the Beef: Increase the heat to medium-high. Add the ground beef, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.

      Season: Stir in the soy sauce, garlic powder, onion powder, black pepper, and salt. Mix well to evenly coat the beef.

        Add Rice and Broth: To the skillet, add the uncooked rice and beef broth. Stir to distribute rice evenly and bring to a boil.

          Simmer: Once boiling, reduce heat to low, cover the skillet, and simmer for about 15 minutes, or until the rice is fully cooked and has absorbed the liquid. If using frozen broccoli, add it after 10 minutes of cooking so it can steam properly.

            Incorporate Broccoli: After the rice is cooked, fold in the broccoli florets (fresh or frozen) and let it cook for an additional 5 minutes until the broccoli is tender.

              Add Cheese: Remove the skillet from the heat and stir in 1 cup of shredded cheddar cheese until melted and creamy. Taste and adjust seasoning if needed.

                Serve: Top with extra cheese, cover for a couple of minutes until melty, then garnish with sliced green onions if desired. Serve hot directly from the skillet.
