1 lb (450g) ground beef

1 small onion, diced

2 cloves garlic, minced

1 cup uncooked long-grain rice

2 cups beef broth

1 can (14.5 oz) diced tomatoes, with juices

1 cup frozen mixed vegetables (peas, carrots, and corn)

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 1/2 cups shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet or sauté pan over medium heat, brown the ground beef with the diced onion, stirring occasionally until the meat is no longer pink, about 5-7 minutes. Drain any excess fat.

    Add the minced garlic and cook for another minute until fragrant.

      Stir in the uncooked rice, beef broth, diced tomatoes (with juices), frozen vegetables, smoked paprika, dried oregano, salt, and pepper. Mix well to combine all the ingredients.

        Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and let it simmer for about 20-25 minutes, or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

          Once the rice is cooked, sprinkle the shredded cheddar cheese evenly over the top of the casserole. Cover again and let it stand for about 5 minutes, or until the cheese is melted.
