1 lb (450g) ground beef

1 cup long-grain white rice

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (14.5 oz) diced tomatoes, undrained

2 cups beef broth

1 cup shredded cheddar cheese (plus extra for topping)

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

½ teaspoon salt

½ teaspoon black pepper

1 cup frozen peas (optional)

Fresh parsley, chopped (for garnish)

Cook the Beef: In a large, deep skillet or a Dutch oven, over medium heat, add the ground beef. Cook it, breaking it up with a spatula, until it's browned and cooked through (about 6-8 minutes). Drain any excess grease.

    Sauté Vegetables: Add the chopped onion, garlic, and bell pepper to the skillet with the beef. Sauté for about 3-4 minutes until the vegetables become tender and the onion is translucent.

      Add Rice and Seasoning: Stir in the long-grain white rice, smoked paprika, Italian seasoning, salt, and black pepper. Mix well to coat the rice with the seasonings.

        Incorporate Tomatoes and Broth: Pour in the diced tomatoes with their juices and the beef broth. Stir everything to combine, ensuring the rice is evenly distributed.

          Simmer: Bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 20-25 minutes, or until the rice is cooked and most of the liquid is absorbed.
