4 boneless, skinless chicken thighs

1 cup long-grain white rice

1 medium onion, diced

4 cloves garlic, minced

2 cups chicken broth

1 cup heavy cream

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon butter

Fresh parsley, chopped (for garnish)

Sear the Chicken: In a large skillet or pan, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat. Season the chicken thighs with salt, pepper, paprika, and thyme. Once the oil is hot, add the chicken to the pan and sear for about 5-6 minutes on each side, or until golden brown. Remove the chicken and set aside.

    Sauté Aromatics: In the same pan, add the diced onion and sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional 1-2 minutes, stirring constantly to avoid burning.

      Add Rice: Stir the uncooked rice into the pan, allowing it to toast slightly with the onions and garlic for about 1 minute. This enhances the flavor of the rice.
