One-Pot Cheesy Chicken and Broccoli Rice

1 lb (450g) boneless, skinless chicken breasts, diced

1 cup (200g) uncooked brown rice

2 cups (480ml) low-sodium chicken broth

2 cups (150g) fresh broccoli florets

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried thyme

Salt and pepper to taste

1 cup (120g) shredded cheddar cheese

1/2 cup (120ml) heavy cream

2 tablespoons olive oil

1 tablespoon butter

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Chicken: In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced chicken and season with salt, pepper, and paprika. Cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Cook Aromatics: In the same pot, add the butter and chopped onion. Sauté for 3-4 minutes, or until the onion is translucent. Stir in the minced garlic and thyme, cooking for an additional 1 minute until fragrant.

      Add Rice and Broth: Add the uncooked brown rice to the pot, stirring to combine with the aromatics. Pour in the chicken broth and bring to a simmer.

        Combine Chicken and Broccoli: Once simmering, return the chicken to the pot and add the broccoli florets. Cover and reduce heat to low. Cook for about 30 minutes, or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

          Create Creamy Factor: Once the rice and chicken are cooked, stir in the heavy cream and cheddar cheese until melted and creamy. Adjust seasoning with additional salt and pepper if necessary.

            Garnish and Serve: Remove from heat and let it sit for a few minutes. Serve hot, garnished with fresh parsley for a pop of color and flavor.
