Ingredients

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 pound andouille sausage, sliced

1 teaspoon Cajun seasoning (plus more to taste)

1 cup orzo pasta

4 cups chicken or vegetable broth

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper, to taste

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Add Vegetables and Sausage: Add the diced red and green bell peppers to the pot, along with the sliced andouille sausage. Sprinkle in the Cajun seasoning, stirring well to coat everything evenly. Cook for about 5-6 minutes, allowing the sausage to brown slightly and the vegetables to soften.

Incorporate the Orzo: Stir in the orzo pasta, making sure it’s well mixed with the sausage and vegetables.

Pour in Broth: Slowly add the chicken or vegetable broth, stirring occasionally. Bring the mixture to a gentle boil, then reduce the heat to low and cover the pot. Allow it to simmer for about 10-12 minutes, or until the orzo is tender and most of the liquid is absorbed.

Add Cream and Cheese: Once the orzo is cooked, slowly pour in the heavy cream and stir well to combine. Gradually mix in the grated Parmesan cheese, continuing to stir until the sauce is creamy and smooth. Season with salt and pepper to taste.

Garnish and Serve: Remove the pot from heat. Garnish the creamy Cajun orzo with sliced green onions and chopped parsley for a pop of color and freshness. Serve warm and enjoy your delicious one-pot meal!
