Ingredients

12 oz (340g) pasta (penne or fusilli work best)

1 can (14 oz) diced tomatoes, with juices

4 cups vegetable broth (or chicken broth)

1 medium onion, finely chopped

4 cloves garlic, minced

1 tsp Italian seasoning

½ tsp red pepper flakes (optional, for heat)

1 cup heavy cream (or coconut cream for a vegan option)

1 cup fresh basil leaves, roughly chopped

1 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Salt and pepper to taste

2 tbsp olive oil

Fresh basil leaves and grated Parmesan for garnishing

Instructions

Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

Combine Ingredients: Add the diced tomatoes (with juices), vegetable broth, Italian seasoning, red pepper flakes (if using), and pasta to the pot. Stir to combine all ingredients.

Cook Pasta: Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for about 10-12 minutes, or until the pasta is al dente. Stir occasionally to prevent sticking.

Make it Creamy: Once the pasta is cooked, remove the pot from the heat. Stir in the heavy cream and chopped basil, and season with salt and pepper to taste. If you want a creamier texture, feel free to add more cream!

Add Cheese: Finally, add the grated Parmesan cheese (or nutritional yeast for a vegan version), and stir until melted and well combined. Let it sit for a couple of minutes to thicken slightly.

Serve: Dish out the creamy pasta into bowls. Garnish with fresh basil leaves and more Parmesan cheese. Enjoy your comforting and delicious one-pot meal!
