Prepare the Chicken: Preheat your oven to 425°F (220°C). If your chicken breasts are thick, consider pounding them to an even thickness (about 1/2 inch) for uniform cooking. This helps them cook more evenly and remain juicy.

    Set Up Breading Station: In one shallow bowl, mix the all-purpose flour with a pinch of salt and pepper. In a second bowl, whisk together the eggs and Dijon mustard until combined. In a third bowl, combine the breadcrumbs with garlic powder, onion powder, paprika, and Italian herbs.

      Bread the Cutlets: Dredge each chicken cutlet first in the flour, shaking off any excess. Next, dip it into the egg mixture, ensuring it’s fully coated, and finally, press it into the breadcrumb mixture until well covered. Repeat this process for all cutlets.
