Ingredients

4 medium zucchini (zoodles)

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

3 tablespoons olive oil

4 cloves garlic, minced

1/2 cup heavy cream

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with olive oil.

Prepare the Zoodles: Use a spiralizer or a vegetable peeler to create zoodles from the zucchini. Once done, place them onto a clean kitchen towel and sprinkle with a little salt. Let sit for about 10 minutes to draw out excess moisture.

Make the Garlic Sauce: In a medium saucepan, heat the olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant but not browned. Lower the heat, then stir in the heavy cream, Italian seasoning, salt, and pepper. Allow to simmer for another 3-4 minutes until slightly thickened. Remove from heat and stir in half of the Parmesan cheese until melted and smooth.

Combine Zoodles and Sauce: Gently squeeze the zoodles in the towel to remove additional moisture, then transfer them to a large bowl. Pour the garlic cream sauce over the zoodles and mix thoroughly until evenly coated.

Layer the Gratin: Spoon the zoodle mixture into the prepared baking dish. Spread it evenly and sprinkle the top with the remaining Parmesan and mozzarella cheese.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes or until the cheese is bubbling and golden brown.

Garnish and Serve: Remove from the oven, let cool for a few minutes, then sprinkle with fresh parsley before serving. Enjoy your deliciously creamy Parmesan Zoodle Gratin!
