Ingredients
  

2 cups of cooked jasmine rice (preferably day-old)

1 large ripe peach, diced

1/2 cup cooked chicken breast, shredded (or tofu for a vegetarian option)

1/2 cup peas and carrots mix (frozen or fresh)

1/4 cup green onions, chopped

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

2 eggs, lightly beaten

1 clove garlic, minced

1 teaspoon fresh ginger, minced

Salt and pepper to taste

Optional: 1 tablespoon chopped fresh basil or cilantro for garnish

Prep Your Ingredients: Before you start cooking, gather and prep all your ingredients. This makes the cooking process smoother and faster.

    Heat the Pan: In a large skillet or wok, heat the sesame oil over medium heat.

      Cook Aromatics: Add the minced garlic and ginger to the pan. Sauté for about 1 minute until fragrant but not burnt.

        Scramble Eggs: Push the garlic and ginger mixture to one side of the pan and pour the beaten eggs into the empty side. Stir them until they are just set, then mix everything together.

          Add Chicken and Veggies: Incorporate the shredded chicken (or tofu), peas, and carrots into the mix. Stir-fry for about 2-3 minutes until everything is heated through.

            Add Rice and Peach: Add the cooked rice to the pan. Use a wooden spatula to break up any clumps. Gently fold in the diced peach.

              Season: Pour the soy sauce over the rice mixture and sprinkle with salt and pepper to taste. Stir everything together to ensure the rice is evenly coated with the sauce.

                Finish with Green Onions: Lastly, add the chopped green onions, mixing them through just before removing from heat.
