Pear & Walnut Baked Brie

1 medium ripe brie cheese (8-10 oz)

1 ripe pear, thinly sliced

1/2 cup walnuts, roughly chopped

1/4 cup honey

2 sprigs fresh rosemary, chopped (or 1 tsp dried rosemary)

1 tsp vanilla extract

1/2 tsp cinnamon

Salt to taste

1 sheet of puff pastry (thawed if frozen)

1 egg (beaten, for egg wash)

Fresh thyme leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Brie: Unwrap the brie cheese and place it on a baking sheet lined with parchment paper.

      Prepare the Pears and Walnuts: In a medium bowl, combine the sliced pears, chopped walnuts, honey, chopped rosemary, vanilla extract, cinnamon, and a pinch of salt. Mix well to coat the pears.

        Assemble the Cheese: Spoon the pear and walnut mixture generously over the top of the brie, allowing some of the mixture to spill over the sides.

          Wrap the Brie: Roll out the puff pastry on a lightly floured surface. Cut a circle large enough to completely wrap the brie (approximately 12 inches in diameter). Place the wrapped brie seam-side down on the baking sheet.

            Apply the Egg Wash: Brush the surface of the puff pastry with the beaten egg to achieve a golden color while baking.

              Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the puff pastry is golden brown and puffed.

                Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh thyme leaves, if desired. Serve warm with toasted baguette slices or crackers for dipping.
