2 cups cooked turkey breast, shredded or diced

1 ripe pineapple, peeled, cored, and cut into bite-sized chunks

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 avocado, diced

1/4 cup red onion, thinly sliced

1 cup mixed greens (arugula, spinach, or lettuce)

1/2 cup sweet corn (canned or grilled)

1/4 cup cilantro leaves, chopped

1/4 cup slivered almonds (or any nuts/seeds of your choice)

Salt and pepper to taste

For the Dressing:

1/4 cup olive oil

2 tablespoons honey or agave syrup

1 tablespoon apple cider vinegar or lime juice

1 teaspoon Dijon mustard

Instructions
 

Prepare the Dressing:
