Pumpkin French Toast Roll Bites

Ingredients
  

8 slices of bread (white or whole grain)

1 cup pumpkin puree

2 large eggs

1/2 cup milk (dairy or non-dairy)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 cup brown sugar

1/4 cup butter (for frying)

Optional: powdered sugar and maple syrup for serving

Prepare the Filling: In a medium mixing bowl, combine the pumpkin puree, eggs, milk, vanilla extract, cinnamon, nutmeg, ginger, and brown sugar. Mix until well combined and smooth. Set the filling aside.

    Flatten the Bread: Using a rolling pin, flatten each slice of bread to about 1/4 inch thick. This will make it easier to roll up.

      Add Filling: Spread about 1-2 tablespoons of the pumpkin filling evenly over each slice of flattened bread.

        Roll the Bread: Starting from one end, carefully roll up each slice tightly to form a roll. Pinch the edges to seal the filling inside.

          Heat the Pan: In a large skillet, melt the butter over medium heat until it’s sizzling.

            Cook the Roll Bites: Place the rolled-up bread seams side down in the skillet. Cook for about 2-3 minutes on each side, or until golden brown and crispy.

              Surface Coating (Optional): If desired, you can sprinkle a mix of cinnamon and sugar on the roll bites while they are still warm for an extra sweet crunch.

                Serve: Remove the roll bites from the skillet and let them cool slightly. Dust with powdered sugar and serve with maple syrup for dipping.
