1 cup pumpkin puree

4 large eggs

1 cup milk (or non-dairy substitute)

1/2 cup maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

8 slices of bread (challah, brioche, or your choice)

1/4 cup chopped pecans or walnuts (optional)

Whipped cream for topping (optional)

Powdered sugar for dusting (optional)

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a standard muffin tin with cooking spray or butter.

    Make the Custard: In a large mixing bowl, combine the pumpkin puree, eggs, milk, maple syrup, vanilla extract, and all the spices (cinnamon, nutmeg, and ginger). Whisk until smooth and well combined.

      Prepare the Bread: Cut each slice of bread into small cubes (about 1-inch pieces) and add them to the custard mixture. Gently toss to coat the bread well in the custard mixture. If using, fold in the chopped pecans or walnuts.

        Fill the Muffin Tin: Using a spoon, scoop the custard-soaked bread into each muffin cup, filling them about three-quarters full. Press down gently to pack the mixture and allow any excess custard to soak in.

          Bake: Bake in the preheated oven for 20-25 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.

            Cool and Serve: Remove the muffin tin from the oven and let it cool for about 5 minutes. Carefully run a knife around the edges of the cups and gently lift them out.
