Ingredients

1 cup rolled oats

1/2 cup canned pumpkin puree

1/4 cup almond butter (or any nut/seed butter of your choice)

1/4 cup honey or maple syrup (adjust for desired sweetness)

1/2 teaspoon vanilla extract

1 teaspoon pumpkin spice (or cinnamon)

1/4 teaspoon salt

1/3 cup chocolate chips (optional)

1/4 cup chopped nuts (e.g., pecans, walnuts, or almonds)

1/4 cup dried cranberries or raisins

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract. Stir until the mixture is smooth and well-blended.

Combine Dry Ingredients: In a separate bowl, mix the rolled oats, pumpkin spice, and salt. Make sure to combine thoroughly so the spices are evenly distributed.

Combine Mixtures: Gradually add the dry mixture into the wet mixture, stirring until everything is well combined. The mixture should be thick and slightly sticky.

Add Extras: Fold in the chocolate chips, chopped nuts, and dried fruits until they are evenly distributed throughout the mixture.

Shape Clusters: Using your hands or a spoon, form small clusters of the mixture (about 1 to 2 tablespoons each) and place them onto the prepared baking sheet. Ensure they're spaced out as they don’t spread much.

Bake: Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown. Keep an eye on them to avoid burning.

Cool & Store: Once baked, remove from the oven and let the clusters cool on the baking sheet for 5-10 minutes. Once cooled, transfer them to a wire rack to cool completely. Store in an airtight container for up to a week.
