1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1 tablespoon pumpkin pie spice

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 large eggs

1 cup canned pumpkin puree

1/2 cup milk (dairy or non-dairy)

1/4 cup vegetable oil

1 teaspoon vanilla extract

1/2 cup chopped nuts (e.g., walnuts or pecans) or chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    Mix Dry Ingredients: In a large mixing bowl, combine rolled oats, all-purpose flour, brown sugar, granulated sugar, pumpkin pie spice, baking powder, baking soda, and salt. Whisk until well combined.

      Prepare Wet Ingredients: In another bowl, whisk together the eggs, pumpkin puree, milk, vegetable oil, and vanilla extract until smooth and well-blended.
