Ingredients

1 cup Arborio rice

4 cups vegetable or chicken broth

1 cup fresh mushrooms, sliced (like cremini or button mushrooms)

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup dry white wine (optional)

1/2 cup grated Parmesan cheese

1/2 cup heavy cream

2 tablespoons olive oil

2 tablespoons butter

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Broth: In a saucepan, bring the broth to a simmer over low heat. Keep it warm throughout the cooking process.

Sauté the Aromatics: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté for about 2-3 minutes, until it becomes translucent.

Add Garlic and Mushrooms: Stir in the minced garlic and sliced mushrooms. Cook for about 5-7 minutes until the mushrooms are tender and have released their moisture.

Toasting the Rice: Add the Arborio rice to the skillet and stir it into the mixture, allowing it to toast slightly for about 1-2 minutes. This step helps to release the rice's starch.

Deglaze with Wine (Optional): If using, pour in the white wine and stir until it is mostly absorbed by the rice.

Add Broth Gradually: Begin adding the warm broth, one ladle at a time. Stir frequently, allowing each addition to be absorbed before adding the next. This process should take about 15-20 minutes. The risotto is done when the rice is creamy and al dente.

Finish with Cream and Cheese: Once the rice reaches the desired consistency, lower the heat and stir in the heavy cream, the remaining tablespoon of butter, and the grated Parmesan cheese. Mix until everything is well incorporated. Season with dried thyme, salt, and pepper to taste.

Serve: Removed from heat and let it rest for a minute. Serve hot, garnished with fresh parsley and an extra sprinkle of Parmesan, if desired. Enjoy your Quick and Creamy Mushroom Risotto Delight!
