Quick Beef and Vegetable Stir-Fry

1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup broccoli florets

1 medium carrot, julienned

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons oyster sauce

1 tablespoon sesame oil

Salt and pepper to taste

Cooked rice or noodles, for serving

Sesame seeds, for garnish (optional)

Green onions, chopped, for garnish (optional)

Instructions
 

Marinate the Beef: In a bowl, combine the sliced beef, soy sauce, and cornstarch. Mix well to coat the beef evenly. Let it marinate for at least 15 minutes while you prepare the vegetables.

    Prepare the Vegetables: Wash and slice all vegetables (bell peppers, broccoli, and carrot) into bite-sized pieces. Set aside.

      Heat the Pan: In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat until shimmering.

        Cook the Beef: Add the marinated beef to the hot pan in a single layer. Let it sear for about 2 minutes without stirring, then cook for another minute while stirring, until the beef is browned and cooked to your liking. Remove the beef from the pan and set aside.

          Stir-Fry the Vegetables: In the same pan, add the remaining tablespoon of vegetable oil. Add minced garlic and grated ginger. Sauté for about 30 seconds until fragrant. Then toss in the broccoli, bell peppers, and carrot. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.

            Combine Everything: Return the cooked beef to the pan with the vegetables. Pour in the oyster sauce and drizzle with sesame oil. Stir everything together and cook for an additional 2 minutes to heat through and combine flavors. Season with salt and pepper to taste.
