1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon paprika

Salt and pepper to taste

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheese (your choice)

Fresh cilantro, for garnish

Lime wedges, for serving

For the Homemade Salsa:

2 medium ripe tomatoes, diced

1 small red onion, finely chopped

1 jalapeño, seeds removed and minced (adjust for spice preference)

1 clove garlic, minced

Juice of 1 lime

Salt, to taste

Fresh cilantro, chopped

Prepare the Salsa: In a medium bowl, combine diced tomatoes, red onion, jalapeño, minced garlic, lime juice, and a pinch of salt. Mix well and set aside to allow the flavors to meld.

    Cook the Turkey: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute.
