2 large whole wheat tortillas

1 cup cooked chicken breast, shredded

1/2 cup shredded cheese (cheddar or mozzarella)

1/2 cup bell peppers (red, yellow, and green), finely diced

1/4 cup corn (fresh, canned, or frozen)

1/4 cup black beans, rinsed and drained

1/4 cup finely chopped spinach or kale

1/2 teaspoon taco seasoning (optional)

1 tablespoon olive oil or cooking spray

Salsa and sour cream (for dipping, optional)

Instructions
 

Prep the Veggies: Start by washing and finely dicing the bell peppers. If using fresh corn, you’ll want to cut it off the cob. If you opted for spinach or kale, chop it into small pieces to make it kid-friendly.

    Mix the Filling: In a mixing bowl, combine the shredded chicken, diced bell peppers, corn, black beans, and spinach. If you'd like to add some extra flavor, sprinkle in the taco seasoning and mix everything well.

      Assemble the Quesadillas: Lay one tortilla flat on a clean surface. Sprinkle half of the shredded cheese evenly over the tortilla. Next, spread the chicken and veggie filling over the cheese. Top with the remaining cheese and place the second tortilla on top.

        Cook the Quesadillas: Heat a non-stick skillet over medium heat and add the olive oil or spray it with cooking spray. Carefully place the assembled quesadilla in the skillet. Cook for about 3-4 minutes, or until the bottom is golden brown and the cheese begins to melt.
