Quick Veggie-Packed Quesadilla Bake

4 large flour or whole wheat tortillas

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 bell pepper, diced (any color)

1 small zucchini, diced

1 small red onion, diced

1 cup chopped spinach (fresh or frozen)

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

1 tablespoon olive oil

½ cup salsa (optional, for serving)

¼ cup sour cream or Greek yogurt (optional, for serving)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Veggies: In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 3-4 minutes until they start to soften.

      Add Remaining Veggies: Stir in the zucchini, corn, black beans, and spinach. Cook for an additional 3-4 minutes until the spinach wilts and the zucchini is tender. Season with cumin, chili powder, salt, and pepper. Remove from heat.

        Layer the Quesadilla: On a baking sheet or in a large baking dish, place one tortilla as the base. Spread half of the veggie mixture evenly over the tortilla. Sprinkle with half of the cheese. Top with another tortilla. Repeat the layering process with the remaining veggies, cheese, and the final tortilla.

          Bake: Place the assembled quesadilla bake in the preheated oven. Bake for 20-25 minutes, or until the cheese is melted and bubbly, and the tortillas are lightly golden.

            Slice and Serve: Remove from the oven and let cool for a few minutes. Cut into wedges and serve with salsa, sour cream, or Greek yogurt on the side. Garnish with fresh cilantro.
