Roasted Corn & Tomato Salad

4 ears of fresh corn, husked

2 cups cherry tomatoes, halved

1 red bell pepper, diced

1 avocado, diced

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped

3 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon garlic powder

Salt and pepper to taste

Juice of 1 lime

1/2 teaspoon cayenne pepper (optional, for a kick)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Corn: Place the husked corn directly on the oven rack or on a baking sheet. Roast for about 20-25 minutes, turning occasionally, until the kernels are crispy and slightly charred. Remove and let cool. Once cool enough to handle, use a sharp knife to carefully slice the corn off the cob into a large bowl.

      Prepare the Veggies: In the same bowl with the roasted corn, add the halved cherry tomatoes, diced red bell pepper, diced avocado, and finely chopped red onion.

        Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, lime juice, salt, pepper, and cayenne pepper (if using). Adjust seasoning to taste.

          Combine Salad: Drizzle the dressing over the salad mixture and gently toss until everything is well coated. Be careful not to mash the avocado.
