Roasted Garlic Mashed Cauliflower Bake

1 large head of cauliflower, cut into florets

1 bulb of garlic

2 tablespoons olive oil

1/2 cup cream cheese, softened

1/2 cup grated Parmesan cheese

1/4 cup sour cream or Greek yogurt

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika

1 tablespoon fresh chives, chopped (for garnish)

1/2 cup shredded mozzarella cheese (optional, for topping)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the bulb of garlic to expose the cloves and place it on a square of aluminum foil. Drizzle 1 tablespoon of olive oil over the exposed garlic, wrap it tightly in the foil, and roast in the oven for about 30-35 minutes, or until the cloves are soft and caramelized.

    Cook the Cauliflower: While the garlic is roasting, bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 8-10 minutes, or until fork-tender. Drain and set aside.

      Blend Ingredients: In a food processor, combine the cooked cauliflower, roasted garlic (squeezed out of their skins), cream cheese, Parmesan cheese, sour cream, remaining tablespoon of olive oil, salt, black pepper, and smoked paprika. Blend until smooth and creamy. Taste and adjust seasoning if necessary.

        Prepare for Baking: Preheat your oven to 350°F (175°C). Smooth the cauliflower mixture into a greased baking dish. If you like, sprinkle the shredded mozzarella cheese on top for a cheesy crust.

          Bake: Place the baking dish in the oven and bake for 20-25 minutes, or until heated through and the top is slightly golden.

            Serve: Remove from the oven and let it cool slightly. Garnish with chopped chives before serving.
